Born in Normandy, France, a region celebrated for its deep culinary traditions, Chef Jeremy Gillon grew up surrounded by the rhythms of nature and the abundance of his homeland. Those early experiences shaped his enduring respect for ingredients and the quiet artistry of French cuisine.
His formative years were spent in the kitchens of some of France’s most respected Michelin-starred restaurants, where precision, discipline, and creativity became second nature. It was there that he discovered his guiding philosophy, that every dish begins with nature’s finest produce and a deep understanding of the seasons.
A defining chapter in Jeremy’s career took place in Savoie, amid the beauty of the French Alps. Leading three restaurants at
Val Thorens Ski Resort, he catered to a discerning international clientele while refining a cuisine that was both elegant and grounded in the principles of seasonality and sustainability. In 2015, his commitment was rewarded with a Michelin star at L’Epicurean — a recognition of his innovative yet deeply rooted approach to French gastronomy.
Frequent visits to Singapore soon drew him into the city’s vibrant culinary landscape, where he found inspiration in the diversity of flavors, cultures, and ingredients. This spark led to the creation of Restaurant JAG, a modern French restaurant that pays homage to seasonal vegetables and the purity of natural flavors. Here, Jeremy’s cuisine celebrated produce at its peak, delicate, expressive, and crafted with intention.
By forging close relationships with farmers and producers, he ensured that every ingredient told a story, of place, of season, and of care. His work at JAG redefined how vegetables could take center stage, earning acclaim for its thoughtfulness, balance, and artistry.
After a decade of Michelin-star recognition, Chef Jeremy now turns a new page with Essence & Experience, Culinary Arts by Jeremy Gillon. Through this venture, he extends his creative philosophy beyond the restaurant walls, offering culinary consulting, international events, and bespoke private dining experiences. Each is designed to reflect his mastery of seasonal ingredients and his belief that true cuisine is an ongoing dialogue between nature, craft, and emotion.
